Hi Friends,

I haven’t done a recipe for ages so here is one for low carb chicken zucchini boats I discovered recently and I’m loving them! I have always wanted to try these zucchini boats after spotting them on Pinterest a while back and finally got around to making them. I had to change up the recipe a little, due to a lack of certain ingredients but these ones turned out amazing!

I am trying to cut back on my carb intake whilst following the Mediterranean diet as best I can. These were so tasty and healthy, I figured I would share the recipe with you so you can try them out yourselves. I had to make them again last night cos I was craving them since trying them the other night. The second time around I made them a little differently, just to try out another flavour and they were equally yummy.

They are easy to prep, especially if you cook up the chicken beforehand which is what I did to save time. This makes it an ideal choice for weekly food prepping if you do that.It really couldn’t be simpler once you have the cooked chicken ready. You simply mix up the sauce with the chicken and scrape out the inside of the zucchini, which can also be prepped and bagged in advance if needs be. Perfect for anyone who is short on time.

I have an addiction to carbs where the more I eat, the more I crave so I am trying to cut back on pasta, bread and rice. It has been a difficult transition but now that I have cut right back, I no longer crave the carbs all the time so my body has adapted. I have noticed I feel less sluggish and bloated so I am going to try and stick with my low carb intake. Granted, I miss my carbs but I don’t miss the sluggishness and bloating so I am happy to find carb alternatives and low carb options.

I used to think low carb was boring and would leave me hungry as I have been on a low carb diet before and hated it. The problem was that I completely cut out carbs and wouldn’t allow myself any at all. I also didn’t realise that there are actually loads of low carb alternatives out there that are great swaps and fill you up nicely. I will follow up with some of the better low carb recipes I have been trying recently but this is definitely one of my faves.

Here is the recipe:

Low Carb Chicken Zucchini Boats –

Servings : 1 person

INGREDIENTS –

1 large Zucchini/Courgette

1 medium chicken breast

1/4 cup of grated parmesan

1/2 a ball of buffalo mozzarella

Cracked pepper and sea salt

Tomato purée/red pesto sauce

Olive oil

DIRECTIONS –

Preheat the oven to 200°

Use a knife to slice the zucchini/courgette in half

Prepare a baking dish with tin foil/olive oil

Scrape out the seeds and inside of the zucchini/courgette to make boats –

Place the boats in the baking dish and drizzle olive oil along the insides

Season with a little salt and pepper

Fry the chicken/oven bake, then slice it into small bitesize pieces

Mix the chicken and tomato purée/red pesto in a bowl and add the parmesan

Mix together well, then spoon the mixture into the zucchini boats

Press it down so that it doesn’t fall out. (You can use tin foil to help sturdy them at the sides if you want)

Tear strips of mozzarella and place all along the tops so they are covered

Season with salt and pepper

Place in the oven for 25 mins. Once cooked, remove from the oven and leave to sit for around 3-5 mins.
