Low Carb Chicken Zucchini Boats

Low Carb Chicken Zucchini Boats on a plate

Hi Friends,

I haven’t done a recipe for ages so here is one for low carb chicken zucchini boats I discovered recently and I’m loving them! I have always wanted to try these zucchini boats after spotting them on Pinterest a while back and finally got around to making them. I had to change up the recipe a little, due to a lack of certain ingredients but these ones turned out amazing!

I am trying to cut back on my carb intake whilst following the Mediterranean diet as best I can. These were so tasty and healthy, I figured I would share the recipe with you so you can try them out yourselves. I had to make them again last night cos I was craving them since trying them the other night. The second time around I made them a little differently, just to try out another flavour and they were equally yummy. read more

a woman weighing herself after waking, getting out of bed, stretching

Hi Everyone,

If you happen to follow my blog you will know I am a huge fan of intermittent fasting. I recently discovered 16:8 intermittent fasting which incredibly, helps to lose weight while you sleep! I decided to give it a go and so far I have lost 2kg/4.4lbs by following the simple fasting basics for just over a week!

I have been doing the new 5:2 diet by Michael Mosley on and off for a while and am seeing some steady results, losing around 2lbs/.9kg a week which is a healthy progress. There are so many health benefits involved with intermittent fasting, apart from the obvious weight loss. I have wrote an extensive article on it here. read more

How to Make Yoghurt at Home with a Yoghurt Maker (Sugar-free Berry Coulis Recipe Included)

Yoghurt with berry coulis topping

Hi Guys!

As part of my health kick where I am sticking to the Mediterranean diet principles and trying to eat more homemade and locally sourced produce, I have decided to make my own yoghurt at home. I love it and it tastes better than store bought so here is how to make yoghurt at home with a yoghurt maker!

I had been buying a probiotic yoghurt to eat for breakfast in order to help balance my gut health every morning. Probiotic translates as “for life,” from its Greek and Latin etymology and they are good bacteria that help balances your gut microbiota which results in a healthier body and digestive system. You can read more about gut health in my recent post here – How to improve gut health naturally. read more

The New 5:2 (Mediterranean Diet Combined with Intermittent Fasting!)

a healthy green chicken salad

Hi everyone!

So excited to find out about the new 5:2! It is a Mediterranean diet combined with intermittent fasting by Michael Mosley. If you follow my blog you will know I’m a huge fan of both the 5:2 and Mediterranean diets. In fact they are the only two diet plans that have ever really worked for me. I had been discussing in my previous posts about embarking on the Mediterranean diet as it is the best diet in the world (voted by the top medical health practitioners worldwide year after year). As you may know, I am on the Mediterranean diet at the moment and I’m enjoying the health benefits – especially being allowed to have wine! Definitely a plus point. I don’t buy processed food anymore and I waltz past the sweets section in the supermarket these days without a second glance. It helps that I usually have a toddler and a 3 year old with me in the trolley so I’m steering clear anyway! read more

A Typical Day on the Mediterranean Diet

a Mediterranean diet dish

Hi Everyone,

I decided to post a typical day on the Mediterranean diet to show how I am progressing and give an idea of what it involves. So far I have been enjoying the Mediterranean diet as it isn’t too restrictive, like previous diets I have tried in the past. It is more of a healthy lifestyle plan than a diet but you lose around 2 pounds a week on average and that is what is considered ‘healthy weight loss’. It is more sustainable than most quick-fix diets and it allows you to eat regular meals and even have a glass of wine with dinner, so for me that is working well. I do love my food and wine! read more
