Hi Friends,

I haven’t done a recipe for ages so here is one for low carb chicken zucchini boats I discovered recently and I’m loving them! I have always wanted to try these zucchini boats after spotting them on Pinterest a while back and finally got around to making them. I had to change up the recipe a little, due to a lack of certain ingredients but these ones turned out amazing!

I am trying to cut back on my carb intake whilst following the Mediterranean diet as best I can. These were so tasty and healthy, I figured I would share the recipe with you so you can try them out yourselves. I had to make them again last night cos I was craving them since trying them the other night. I have been following the Mediterranean diet for a while now and I’m enjoying the benefits so far. I have just introduced 5:2 intermittent fasting into the mix so I am happy to be losing weight and feeling great. The first couple of weeks take a bit of adjusting to since the calorie reduction to 800 is a bit restrictive, but actually it isn’t too bad at all. As promised I'm adding some 5:2 yummy recipes to take the edge off those fast days! I told you it wouldn't be boring and tasteless just because its low calories. This meal is full of protein for the day too so you will feel full after it and its very healthy too. You can always keep some for lunches in the next days or just divide the recipe ingredients by 4 if it is just one serving. Enjoy!!
