Tasty Rustic Bisque Soup

INGREDIENTS:

5 SLICES OF BACON, CHOPPED OR ONE PACKET OF LARDONS

3 CUPS OF CARROTS, CHOPPED

1 CUP CELERY, CHOPPED

4 CUPS POTATOES, PEELED & CHOPPED

3 CUPS OF ONIONS, CHOPPED

2 CUPS OF CHICKEN STOCK

1 CUP OF GRATED CHEESE

1 CUP OF MILK

1 CUP CREAM

6 TBSP BUTTER

DIRECTIONS:

USING A LARGE SAUCEPAN OVER MEDIUM HEAT, MELT THE BUTTER AND SAUTE ONIONS, CARROTS AND CELERY TIL TENDER.

ADD POTATOES AND CHICKEN STOCK, THEN COVER AND COOK FOR 20MINS

ADD MILK AND CREAM AND COOK FOR 5MINS MORE

REMOVE FROM HEAT AND STIR IN THE CHEESE

ADD SOUP TO A BLENDER OR USE A HANDHELD BLENDER TO PUREE UNTIL YOUR DESIRED TEXTURE IS ACHIEVED. POUR INTO BOWLS

GARNISH WITH BACON. IF YOU HAVE LEFTOVERS ADD THE REST OF THE BACON AND STORE IN AN AIRTIGHT CONTAINER ONCE COOLED AND IT SHOULD LAST A FEW DAYS

This is an amazing and tasty soup and definitely my favourite. Its very filling so perfect for lunch. You don’t even need to have bread with it as its quite heavy. I wouldn’t really have it as a starter for a main course for that reason. I find even when I’m full i keep craving more. Its that good!!
