Healthy Oatmeal Cup Snacks

I made these yummy and healthy oatmeal cup snacks with my 3 year old the other day and she absolutely loved them. I was delighted because she normally asks me to bake cakes and these are super healthy. They are a perfect snack without sugar and packed full of nutrients. They were really quick and easy to prep and they are perfect for baking with kids.

I had some oatmeal and bananas and decided to mix in some dates to substitute the sugar. Both the banana and dates add a natural sweetness and you can add in some frozen berries or else raisins for an extra taste if you like. The healthy oatmeal cup snacks are ideal for a healthy mid morning snack or to give the kids for school.

They didn’t last long at all so you might want to make extra! I made 6 to start but next time I will be making 12. I used a regular silicon muffin tray but any muffin or cupcake tray will do.

There are lots of possibilities with these as you can play around with different healthy ingredients such as raw cacao, grains and seeds, chia seeds, quinoa, goji berries and more…

Here is what you need –

3 cups of oatmeal

2 ripe bananas

A handful of dates (seeded and chopped) or blueberries/similar sweet fruit

Mixed grains and seeds (I used Trader Joe’s mixed grains but you can use sunflower seeds and pine nuts or any grains you like)

A good sprinkling of wheatgerm (optional) as it has a nice nutty flavour

Milk to help blend

A tbsp of natural honey

A blender

DIRECTIONS –

  1. Chop the bananas and add in the chopped dates to the blender with some milk to help blend.
  2. Blend well and transfer to a large bowl.
  3. Add in the oatmeal gradually while stirring (this is where the kids can help)
  4. Add in a little more milk as needed, to help blend and mix together.
  5. Add in the grains. Chop them up if you can as it is better for digestion and nutritional value.
  6. Add in the tbsp of honey and mix well. Add in the wheatgerm (optional)
  7. Add in any extra fruit or flavourings and if needs be, add more milk to blend.
  8. Bake at 160 for around 20-25 mins until golden brown on top.
  9. Leave to cool for around 5-10 mins
  10. Enjoy! They keep for a few days to a week if kept in an airtight container.

Here is what ours looked like as they went into the cases. They were nicely sweet but if you want them to be extra sweet for the sweet tooth, you can always pour some good quality melted dark chocolate with a spoon to drizzle. Add in nuts if you want!

I found that by getting my 3 year old to help with the making and baking process, she was more keen to eat them so it is a nice fun thing to do and help the kids get involved with healthy baking!

Once they are done, do leave them to cool for a bit as they need to set properly. They are great for lunch boxes and taste really yummy. I will definitely be trying out different variations of these as they are such a huge hit at home.

It is sometimes hard to get my little one eating nutritional food but these get devoured. Beats chocolate and sweets anyday!
