White Choc & Almond Amaretto Cheesecake

 

Need I say More?…

Ingredients:

4 EGGS

2 TSP ALMOND EXTRACT

2 OZ OF GOOD WHITE CHOC FINELY CHOPPED

2 CUPS SUGAR

1 TSP VANILLA EXTRACT/ 1 VANILLA POD

PINCH OF SALT

3/4 CUP OF PLAIN ALMONDS FINELY CHOPPED

1/4 CUP OF FLAKED ALMONDS

2 1/2 CUPS OF CRUSHED DIGESTIVE BISCUITS/GRAHAM CRACKERS

1/2 CUP OF UNSALTED BUTTER MELTED

2 PACKS OF 8OZ CREAM CHEESE

2 PACKS OF 8 OZ MASCARPONE

16 OZ OF SOUR CREAM

4 TBSP AMARETTO

Directions:

GREASE A 9″ SPRINGFORM BAKING PAN AND SET ASIDE

PREHEAT OVEN TO 325°

MIX TOGETHER THE CRUSHED BISCUITS, BUTTER, 1/4 CUP OF SUGAR AND 1 TBSP OF AMARETTO

USE A BLENDER TO FINELY CHOP 1/4 CUP OF ALMONDS AND MIX IN

SPREAD MIXTURE INTO THE PAN BASE AND UP THE SIDES ABOUT HALF WAY AND PRESS DOWN FIRMLY FOR THE CRUST. SET ASIDE

MIX TOGETHER THE CREAM CHEESE, MASCARPONE AND SUGAR TOGETHER WITH A BEATER

ADD THE EGGS ONE BY ONE WITH A FORK UNTIL JUST COMBINED

ADD 1/4 CUP ALMONDS, 3TBSP AMARETTO, SALT AND VANILLA EXTRACT/ POD SEEDS AND MIX

STIR IN THE CHOCOLATE AND POUR INTO THE PAN OVER THE CRUST

PLACE THE PAN OVER A SHEET OF BAKING PAPER AND BAKE FOR 55-65MINS UNTIL ALMOST SET

WHILE THATS BAKING, MIX TOGETHER THE SOUR CREAM, 1/4 CUP SUGAR, 1TSP ALMOND EXTRACT AND SPREAD EVENLY ON THE ALMOST BAKED CHEESECAKE

BAKE FOR ANOTHER 5MINS TO SET

REMOVE FROM THE OVEN AND LET COOL IN PAN FOR 10MINS

USE A KNIFE TO GO AROUND THE EDGES OF THE PAN CAREFULLY

LEAVE IN THE SPRING FORM AND MOVE TO A COOLING RACK

SPRINKLE WITH FLAKED AMONDS

COOL FOR AT LEAST AN HR AND MOVE TO THE FRIDGE TO CHILL OVERNIGHT

NEXT DAY, REMOVE THE SPRINGFORM SIDES AND SLICE

TIP: RUN A KNIFE UNDER HOT WATER TO CUT EVEN SLICES

All i can say is WOW!!! It is worth the effort guys. You can freeze individually wrapped slices to eat whenever you have someone over for coffee or just have the munchies. Makes a fab birthday cake
