Chocolate Chunk Oatmeal Biscuits

Hi Everyone,

If you read my recent blog post on self-care, then you may have noticed that one of the suggestions is to bake some nice yummy treats for yourself! Yipee, that means it is guilt-free, cos i said so haha! Anyone asks, you can tell them i told you that in order to look after yourself, you need to bake yummy treats for yourself on a regular basis. Why? Because it makes you happy of course! Too many people are afraid to treat themselves due to boring and strict diets or healthy lifestyle choices, basically. Thats why I’m here to give you a little push in the direction of deliciously sweet and mouth-watering biscuits. I happened to make these a few years ago back in New Zealand and they were completely amazing. I actually meant to bake them for a market, they are THAT good. I was thinking to myself, i could probably just bake these cookies by the dozen and sell them to make some cash because they’re completely addictive and people would keep coming back for more heehee. Who knows, i may still rock on with that idea but for the time being I’m a full time Mum with no babysitter – so that may be a while away.

Anyhoo, if you happen to like chocolate chip cookies, then you will be enamoured by this awesome recipe. Its not your average take on the choc chip cookie, in fact it has a secret ingredient that i have never encountered whilst making the usual kind. There must be millions of the same choc chip cookie recipes floating around the internet and on Pinterest. They’re all the same ingredients with maybe a little tweaking here and there so i have saved probably at least twenty of those! I even have a choc chip cookie section. Ok so i may be an addict and to be honest, it is the recipe i make the most. I mean, you can’t go wrong with them. Well, you can, but when they are made properly they are always a big hit in our house. They are nearly always gone by the end of the day so they must be!

If you are a choc chip cookie connoisseur like moi, you will be chuffed with this version of the classic biscuit. Impress your friends and family with these cookies, and up your game! I tell you, if you want to bribe neighbours/new love interest/just about anyone, pop round with a batch of these and they will likely succumb. Freshly baked is best, however, they taste great for a few days after. Don’t worry about it, they’ll most likely be long gone by then! Its probably best to share, otherwise you may eat the whole lot to yourself, so sharing is caring and you have been warned!

Disclaimer : You may never bake a standard chocolate chip cookie again after trying these due to their extreme yumminess. Based on many opinions as well as my own. Decide for yourself!

PREP TIME : 30 MINS

COOK TIME : 20 MINS

MAKES 24

 

INGREDIENTS:

250 G BUTTER, SOFTENED

3 TBSP SWEETENED CONDENSED MILK

3/4 CUP WHITE SUGAR

1 1/2 CUPS OF FLOUR

1 1/2 CUPS OF ROLLED OATS

1 TSP BAKING POWDER

200G GOOD QUALITY CHOCOLATE (DARK, MILK OR WHITE) – ROUGHLY CHOPPED

 

DIRECTIONS:

PREHEAT THE OVEN TO 180°

LINE 2 BAKING TRAYS WITH BAKING PAPER

BEAT TOGETHER THE BUTTER CONDENSED MILK AND SUGAR UNTIL LIGHT AND CREAMY

ADD IN THE FLOUR, ROLLED OATS AND BAKING POWDER

ADD IN THE ROUGHLY CHOPPED CHOCOLATE CHUNKS

MIX WELL AND SCOOP SPOONFULS ONTO THE BAKING PAPER

FLATTEN THE DOUGH TO SHAPE INTO COOKIES

BAKE FOR 18-20 MINS UNTIL GOLDEN BROWN
