I am a huge avocado fan. It’s one of those tasty and filling healthy snacks that I never tire of. It can make a boring salad taste better, a creamy delicious dressing or eaten on its own with some olive oil and pepper. So many possibilities. All of them yummy! Avocado toast is bound to impress!
With Christmas approaching I was considering having a nice breakfast or brunch gathering. I began trying to think up of something light but filling and tasty, a kind of appetizer to keep us going until dinner which will probably happen around 3ish. Something that can be easily whipped up and enough to feed a crowd. I had the idea of doing some nice avocado toasts. Since there are so many possibilities, I figured they would be ideal as they are suitable for most tastes, with lots of different topping options.
Here are the ones I came up with –
AVOCADO, TOMATO, GARLIC AND RED ONION TOAST:
WHAT YOU NEED –
4 SLICES OF WHOLEGRAIN BREAD, TOASTED
2 MEDIUM-LARGE TOMATOES
AVOCADOES, RIPE ( SCOOP CONTENTS INTO A BOWL )
SALT AND PEPPER (CRACKED)
OLIVE OIL
DIRECTIONS –
1.MASH THE AVOCADO WITH A FORK IN THE BOWL AND ADD SALT AND PEPPER FOR TASTE
2. CUT THE TOMATO INTO SALSA / BRUSCHETTA-SIZED PIECES
3. CRUSH THE GARLIC AND ADD TO THE TOMATO AND ADD SOME OLIVE OIL, MIX WELL
4. SPREAD THE MASHED AVOCADO GENEROUSLY ON THE TOAST
5. PUT A LAYER OF TOMATOES, GARLIC AND OLIVE OIL ON TOP OF THE AVOCADO
6. CUT INTO QUARTERS WITH A SHARP CHOPPING KNIFE AND SERVE.
AVOCADO, MOZARELLA, TOMATO AND BASIL TOAST:
WHAT YOU NEED –
4 SLICES OF WHOLEMEAL BREAD, TOASTED
2 MEDIUM-LARGE TOMATOES
2 AVOCADOES, RIPE ( SCOOP CONTENTS INTO A BOWL )
SALT AND PEPPER (CRACKED)
MOZARELLA CHEESE ( SLICED / TORN PIECES )
A HANDFUL OF FRESH BASIL LEAVES
DIRECTIONS –
1.MASH THE AVOCADO WITH A FORK IN THE BOWL AND ADD SALT AND PEPPER FOR TASTE
2. CUT THE TOMATO INTO SALSA / BRUSCHETTA-SIZED PIECES
3. SPREAD THE AVOCADO ON THE TOAST GENEROUSLY
4. PUT ON A LAYER OF TOMATOES, THEN LAYER ON SOME MOZARELLA PIECES
5. ADD A FEW BASIL LEAVES ON TOP
6. CUT INTO QUARTERS WITH A SHARP CHOPPING KNIFE AND SERVE.
AVOCADO TOAST WITH BACON AND ROCKET SALAD:
INGREDIENTS –
4 SLICES OF WHOLEMEAL BREAD, TOASTED
2 AVOCADOES, RIPE ( SCOOP CONTENTS INTO A BOWL )
4 SLICES OF SMOKED BACON OR SMALL PACK OF LARDONS, COOKED
SOME ROCKET SALAD
DIRECTIONS –
1.MASH THE AVOCADO WITH A FORK IN THE BOWL AND ADD SALT AND PEPPER FOR TASTE
2. SPREAD THE AVOCADO ON THE TOAST GENEROUSLY
3. PLACE THE BACON ON THE TOASTS / SPRINKLE ON THE LARDONS EVENLY
4. GARNISH WITH ROCKET
5. CUT INTO QUARTERS AND SERVE.
AVOCADO TOAST WITH SPINACH, FETA AND BALSAMIC :
INGREDIENTS –
4 SLICES OF WHOLEMEAL BREAD, TOASTED
2 AVOCADOES, RIPE ( SCOOP CONTENTS INTO A BOWL )
SPINACH
FETA CHEESE, CUBED INTO SMALL PIECES
BALSAMIC VINEGAR
DIRECTIONS –
1. MASH THE AVOCADO WITH A FORK IN THE BOWL AND ADD SALT AND PEPPER FOR TASTE
2. SPREAD THE AVOCADO ON THE TOAST GENEROUSLY
3. ADD A LAYER OF SPINACH
4. SPRINKLE THE FETA CUBES EVENLY ON TOP AND DRIZZLE BALSAMIC
5. CUT INTO QUARTERS AND SERVE.
AVOCADO, ROCKET, LEMON AND PARMESAN TOAST:
INGREDIENTS –
4 SLICES OF WHOLEMEAL BREAD, TOASTED
2 AVOCADOES, RIPE ( SCOOP CONTENTS INTO A BOWL )
ROCKET SALAD
PARMESAN SHAVINGS
HALF A LEMON
DIRECTIONS –
1.MASH THE AVOCADO WITH A FORK IN THE BOWL AND ADD SALT AND PEPPER FOR TASTE
2. SPREAD THE AVOCADO ON THE TOAST GENEROUSLY
3. ADD A LAYER OF ROCKET AND SQUEEZE SOME LEMON JUICE ONTO IT EVENLY
4. GARNISH WITH A LAYER OF PARMESAN SHAVINGS
5. ADD A DASH OF OLIVE OIL
6. CUT INTO QUARTERS AND SERVE
Well I really enjoyed making and eating these. They are really quick and easy to prepare, look great on the plate and are actually surprisingly filling so you would only need a few quarter pieces per person. I figured that would be enough to keep people going until the Christmas dinner. They are ideal for brunch so I would probably serve them around midday if having dinner around 3ish.
Basically, these are a great snack any time you are peckish and also make a good lunch. 2 half slices, as in one piece of toast with fillings is enough. A nice healthy and tasty avocado toast is a hearty lunch or brunch. Perfect party food for random get togethers.

Avocado for me is one of the best things on this world – the most often i only cut it on half and eat it with a bit of salt but i actually use it in many different ways and its always amazing. thank you for sharing!

Ok. You had me at avocado, tomato, and garlic (three of my favorite things!) and then I read the rest of the recipes and I’m not lying when I say my mouth is watering! I never realized I even liked avocados until a couple of years ago when my friend John Michael cut one up for me and sprinkled it with sea salt! I always thought avocado was just like the runny stuff you get in a Mexican restaurant! Turns out I love avocado…and chunky guacamole! Thanks for the breakfast ideas. Scrumptious!
