Easy low fat Blueberry Frozen Yoghurt

 

Heyy, so as promised i am adding more scrumptious frozen yoghurt recipes as i go along. So yummy and healthy, sure you would be mad not to try it out. Hope you enjoy!

*Ice cream maker required for this one

INGREDIENTS:

3 CUPS OF FRESH/FROZEN BLUEBERRIES

1 CUP OF WHITE SUGAR

1 1/2 CUPS OF GREEK YOGHURT

1/2 CUP OF MILK

3 TBSP LEMON JUICE

DIRECTIONS:

HEAT BLUEBERRIES, LEMON JUICE AND SUGAR IN A SAUCEPAN OVER MEDIUM HEAT.

MASH THE BLUEBERRIES WHEN SOFT WITH A POTATO MASHER/SIMILAR

REMOVE FROM THE HEAT ONCE SUGAR HAS DISSOLVED

SET ASIDE TO COOL FOR AROUND 10-15MINS

TRANSFER INTO A BLENDER AND BLEND UNTIL MIXED JUST ENOUGH, THEN RETURN IT TO THE PAN

USE A LARGE BOWL TO FILL WITH ICE AND WATER AND PUT THE PAN INTO IT TO CHILL

NOW STIR IN THE YOGHURT AND MILK AND MIX WELL

LEAVE TO COOL, THEN TRANSFER TO YOUR ICE-CREAM MAKER AND FOLLOW THE INSTRUCTIONS DEPENDING ON YOUR MACHINE

SERVE IMMEDIATELY FOR SOFT SERVE OR TRANSFER TO FREEZER

STORE IN AN AIRTIGHT CONTAINER

I serve mine with some raspberries, strawberries and some blackberries if they’re in season. Its a lovely dessert or snack on a hot day. Hey, its good any time, what am i saying? Not like you need an excuse, sure its practically guilt-free…
